Bitter gourd Stir Fry Recipe or Bitter gourd Palya
A balanced diet is a must for good health. Our tongue asks
for just sweet recipes but our body health requires a mixture of all vegetables
right from sweet to bitter. I have already shared a rasam from bitter gourd, now it’s the bitter gourd palya or Stir Fry you can say.
Simply to say its from bitter gourd , this
dish too comes out to be sweet with a flavour of bitterness.
All you require is :
2 Bitter gourd
Jaggery
Tamarind
Mustard seeds
Urad dal
Jeera
Red chillies
Rasam Powder
Salt for taste
Turmeric
Cooking oil
Curry leaves
Grated coconut.
Procedure:
Wash the bitter gourd and de seed them. Chop them into small
pieces and keep aside.
Now take a deep pan and add 2spoons of cooking oil. Let the
flame remain low.
Once the oil is hot add mustard seeds, jeera, urad dal,
curry leaves and red chillies. Fry till mustard splitters.
Now add chopped Bitter gourd to the deep pan and keep on
stirring.
Add turmeric, tamarind water, jaggery and salt for taste. A
small piece of tamarind is sufficient, whereas the jaggery should be thrice the
tamarind.
Let the vegetable boil along with these ingredients. Add
water (not more than half cup) when the vegetable starts to stick to the pan.
Remember you should not close the lid. The bitterness of
the Bitter gourd vanishes when its boiled in open lid.
Once the Bitter gourd is softened switch off the flame.
Take half a bowl of grated coconut and mix it well with one spoon rasam
powder. Now add this mixture to the prepared Bitter gourd palya. Stir them well
so that every chopped bitter gourd is dressed with coconut.
Bitter gourd Stir Fry or palya is ready to be served.
You can have it with hot rice with a spoon full of ghee or
also as a combination with chapatti :).
