Half-Ripe Jackfruit Sambar Recipe

The fruity season has arrived , the season of Mangoes and Jackfruit. I had shared quite lot of Jackfruit recipes
during the previous season
- Jackfruit dosa ,
- Jackfruit idli,
- jackfruit jam,
- jackfruit dessert,
- jackfruit seeds sambar and many more.
Ingredients:
- One medium sized jackfruit or half cut.
- Coconut grates (I take half cup usually. You may increase or decrease according to your taste.)
- Tamarind
- Red chillies
- Jaggery
- 2 spoon coriander seeds
- Half spoon cumin seeds
- Curry leaves
- Salt to taste
Remember to choose the half ripened
jackfruit. If it is fully ripe, it will be difficult to chop them also the sambar
will form threads of the fruit.
Half-Ripe Jackfruit Sambar Recipe:
Peeling out jackfruit is the major
difficult task, that too the half ripened one is more difficult. So to simplify
the peeling job, boil the half cut jackfruit in a pressure cooker the way you
cook rice. Now it becomes very simple to peel off the fruit and the seeds.
In just few minutes you can finish off the
peeling and chop them into small pieces. You can even chop the seeds too, it is
optional.
Now in a vessel add water, tamarind and jaggery
and let them boil. The amount of jaggery depends upon the sweetness of the
fruit.
Once boiled add the jackfruit and the seeds.
Add salt for taste, let them boil together.
Now blend the grated coconuts, coriander
seeds, cumin seeds and red chilly by adding little water into a fine paste.
Add this masala to the boiling jackfruit.
Add few curry leaves and boil for 5 more minutes.
Jackfruit Sambar is ready to be served with
hot rice or Chapati.
You can even add peas or channa to add the
taste.
