Cashew nut cheese is what a lovely combination. Cashew benefits
will be a whole different topic to speak about. So, let us not towards cashew health
benefits.
These cashew recipes makes me want to taste cashew ice cream
now. Please let me forget about the cashews calories now. I want to eat now; I
am not on any healthy diet at this moment. So think only of cashews nutrition
facts.
Ingredients:
10 unsalted cashew nuts,
half cup warm milk,
cottage cheese (paneer),
one medium sized onion finely chopped,
one tomato pureed,
ginger garlic paste,
coriander leaves chopped,
2 spoon coriander/dhania powder
Half spoon cumin/jeera powder
One spoon garam masala powder
Half spoon red chilli powder
Salt as per taste
One spoon sugar
For seasoning: mustard seeds, cumin seeds, bay leaves,
turmeric powder.
Cashew Cheese Indian Side Dish Recipe
Soak cashew nuts in warm milk for
15 minutes.
Then blend it and make cashew
& milk paste.
Keep this paste aside for now.
Heat butter in a pan.
Add mustard seeds, cumin seeds and bay leaf.
Once the mustard seeds splutters, add turmeric powder.
Now add chopped onion pieces and sauté for 2 minutes.
Once they change in color, add ginger garlic paste and sauté
again for few minutes.
Then add coriander powder, cumin powder, garam masala, red
chilli powder and mix well.
To this add tomato puree and heat further for 5-7 minutes.
Add the cashew-milk paste to the pan.
With this add the paneer/cottage cheese pieces and mix well.
Now add the desired amount of salt.
Also add one spoon of sugar. Mix everything well.
Close lid and heat for 5 minutes again.
Transfer to a bowl.
Top it with butter and chopped coriander leaves.
Mix well and serve with Indian bread.
If you have cashews allergy then make sure you avoid this.
