Crispy Spicy Uddina Vada Recipe

One more south Indian Recipe J, the Uddina Vada. There is no point in introducing the world
famous Uddina Vada, that too mostly with the combination of Idli.

Ingredients:
One cup Urad dal
Green chillies
Ginger
Coconut grates
Cooking oil
Salt
Procedure:
Clean and Soak urad dal overnight
Next morning, grind the soaked urad
dal along with 2 to 3 green chillies by adding not more than 3 to 4 spoons of
water using a mixer jar.
Remember the dough prepared should be very thick, else it will be difficult to add to the pan also the vada will absorb more of oil.

Keep on patting the dough with
your hands for 10 minutes. Now take a
small piece of the dough and add it to a bowl of water. If it floats then the
dough is ready else pat it for some more time till it floats in water.
Now when the dough is ready, add green chillies, ginger and coconut grates.
Heat
oil in the deep pan.Wet your hands. Take a small piece of dough with a hole at
the centre and leave to hot oil.
Let them fry till golden brown.
Crispy Spicy Uddina Vada is ready. Serve with chutney or sambar.
