Vegetable Poha Recipe
I have shared quite many Beaten Rice recipes including both breakfasts and snacks. Here is one more recipe which is a vegetable
mixture of Poha. Easy to prepare and it comes out to be colorful and tasty.
Ingredients:
2 cups Beaten Rice (Thick Beaten Rice is preferred)
Half cup Moong Dal
Carrots, Beans, Potatoes, Peas, soya, Tomato
Curry Leaves, Corriander Leaves
Green chillies, ginger
Lemon
Groundnuts
Garam Masala Powder
Daniya Powder
Turmeric
For Seasoning:
Mustard seeds, urad dal, ghee
Procedure:
Clean and chop the vegetables. Pressure cook the vegetables
(carrots, beans, potatoes, soya, peas ) Remember to soak the peas overnight.
Clean Moong dal and keep it to boil in a separate
vessel. Cooking Moong dal in a pressure
cooker smashes them completely, so it is better to cook in a vessel for about
15 minutes.
Now take a deep pan in a low flame. Add ghee, mustard seeds, urad dal , ground nuts , ginger pieces and curry leaves.
Wash Beaten Rice , drain out water from it.
Once the mustard splitters, add chopped tomatoes and let them saute.After the tomatoes are fried and sauté, add a cup of water.
To this water add green chillies , salt, turmeric, sugar, daniya powder, garam masala powder and
stir them well.
To this boiling mixture add boiled vegetables and peas. Add
boiled Moog dal. Let all the ingredients boil together for 5 to 10 minutes.
Add Beaten Rice to the boiling pan and stir them well.
Switch off the flame, do not boil for more time after adding beaten rice.
Squeeze Lemon Juice and Garnish with coriander leaves.
Vegetable Poha is Ready. Add a spoon full ghee to taste the best.
This can be served either as a breakfast or even at evening
hours.
