Delicious yummy recipes can be cooked from rava /sooji also
known as semolina. In south of India semolina is an grocery used for breakfasts
like upma, dosas , snacks and some mouth watering desserts. Here is a list of easy rava breakfast /snacks
recipes of traditional south India.
Rava upma:
This is a common south Indian breakfast. The steaming hot upma served with a cup of coffee is a delicious breakfast or an evening snack. Moreover the cooking is simple and requires short time span. Preparation time: 15 minutes
Procedure:
Take a deep pan and heat in low flame. Add 2 spoons of ghee
to the pan. After heating ghee add mustard seeds, urad dal, channa dal,
groundnuts, red chilli and curry leaves.
Once the mustard seeds starts to splitter add 2 cups of rava
and fry continuously until the rava odour vanishes may be for 6 to 8 minutes. Add ghee if required.
After frying transfer all the fried ingredients to a clean
plate. Now to the same pan add 3 cups of water, salt to taste, one spoon sugar,
ginger pieces, green chilli and a pinch of turmeric powder.
Allow the water to boil. To this boiling water add the fried
ingredients in the plate. Do not pour rava at once as it forms lumps. Stir them so that they get mixed with water. Stir
continuously to avoid sticking to pan.
Once rava is boiled and absorbed all water switch off the
flame. Squeeze lemon juice and garnish
with coconut grates.
Rava Upma is ready to be served with hot coffee/tea.
This is how the traditional upma is cooked. A moderation of upma can be cooked by adding vegetables ( tomato, carrots, peas, potatoes, onion) and cashews before adding rava. The rest procedure remains the same.
One more tasty breakfast from semolina. This is an instant Rotti with just a mixture of
curd and few of your favourite ingredients. The recipe will be your kid’s all time
favorite the as dosa comes out to be colourful.
The rava idli recipe resembles the rava dosa kind except for
the dough consistency. You have to maintain thick consistency as you pressure
cook the idli.

This is my all time fun snack right from my childhood. After
all who will not love these crispy spicy vada/pakodas especially during the
cold or rainy evenings?
