Spinach/Palak Rice: A Healthy Lunch Box Idea

A common quarrel running in every roof between a mother and
a child is on “healthy food”. You try to
give the best food for your child, but your kid always runs away J. That
too the lunch box you pack to your kid is always returned back to the mother
with different annoying reasons.
The question here is
how to pack tasty nutrient lunch box so that your child finds interest in
gulping it. The food filled in hot cases
or any tupper wares does not remain hot after 3 to 4 hours, but only retains
the freshness. So you have to take up a challenging task of filling the lunch box with taste and nutrition, that too such
a taste which has to be eatable even when the food is at room temperatures.
First let me discuss how good these leaves are in short.
Nutrition value of
Spinach/ Palak
These fresh green leafy vegetable is an excellent storage of
iron. Among all the vegetables these leaves contain the highest of iron
elements including Vitamin A, C, and K. These leaves are very low in fat and
cholesterol and hence is an diet food. Spinach leaves included in your child’s diet
provides a complete food tackling against the deficiency. Also a must in a
pregnant women.
Ingredients:
One bunch of Spinach/ palak leaves
One bowl cooked rice
4 spoons grated coconut
Ground nuts
Red chilly
Ginger peices.
Lemon juice
Chilly powder
turmeric
sugar
Salt to taste.
For seasoning:
One spoon ghee
Mustard seeds
Urad dal
Cumin seeds
Curry leaves.
Cooking time: 20 minutes
Method of Preparation:
Pressure cook rice in a normal way. You can use basmati rice
to enjoy the taste.
Clean the spinach leaves and drain out the water. Chop the
leaves into smaller pieces.
Take a deep pan in a low flame, add a spoon full of ghee,
mustard seeds, cumin seeds, urad dal, ground nuts, red chillies and curry
leaves. Once the mustard seeds splitter, add the chopped spinach.
Fry the leaves continuously, so that it does not stick to
the pan, add ghee if required. Add
turmeric powder, garam masala powder , chilli powder, one spoon sugar and salt.
Stir them well and let the leaves get cooked well along with the spices.
Once the spinach is cooked switch of the flame. Squeeze
lemon juice and garnish with coconut grates. Now add the cooked rice and toss
them well together.
Healthy tasty Spinach/ palak rice is ready.
The recipe , mostly an Indian Food has a flavor of both rice and spinach. You can
add carrots and peas or any other vegetable of your choice.
