How to prepare Goli Baje/Mangalore Bajji

Goli Baje in Mangalore and Udupi; Mangalore Bajji else where. :)

Yes, it is called as Goli Baje in its original native place.  That is one famous evening snack along with a hot cup of coffee or tea.

The tiny balloon like shape of Goli Baje increases the quest of having more and more.


  • Oil to deep fry.
  • 1 cup maida
  • Curds (preferably sour).
  • Green Chilli pieces
  • Hing
  • Curry leaves (chopped)
  • Coconut pieces (optional)
  • Salt to taste.
  • A pinch of baking soda.

How to prepare Goli Baje or Mnagalore Bajji:
Add maida, salt and curds into a mixing bowl. Mix well to make a thick batter. If curd is not sufficient, add some water too. The batter should be still thick.

How to prepare goli baje batter+recipe

Add baking soda, chopped green cillies and curry leaves, hing. Mix well again.
Allow the batter still as it is for at least 4 hours. This will make the Goli Bajes to bloat and they become crispy too.
When the batter is ready for use, in a wide pan, heat oil for deep frying. Once oil gets heated, drop small balls of the batter into the oil.

The batter will turn into golden brown Goli Baje.
Remove the Bajjis from the oil and place it on a tissue paper.

Serve Hot Goli Baje with coriander leaves chutney.
