Payasa/pudding is specially prepared during the festivals of
goddess in India. With the ongoing celebrations of Navratri season, avalakki
payasa is the recipe for the second day.

You will need
- Half litre milk
- Sugar according to taste
- One cup medium thickness beaten rice
- Powdered elaichi
- Saffron strands a generous pinch
- Grated coconut, preferably dry
- Ghee roasted cashew nut pieces
How to prepare Avalakki Recipe or Beaten Rice Pudding
Wash beaten rice under clean running water. Soak it in
little warm water and keep aside. Allow it to get softened.
Now, heat milk. When it boils, simmer the flame and continue
boiling while continuously stirring the milk.
When milk reduces to half the original quantity, add grated coconut,
softened beaten rice, sugar, elaichi powder and saffron strands. Boil for a
couple of minutes and switch off the flame.
Roast cashew pieces in ghee and add in to the payasa. Hot
ghee and condensed milk deliver great aroma together.
Serve the pudding hot or chilled.
