Akki Payasa; also
known as Haalu(Milk) Payasa, Rice Kheer or Paal Payasa is a special South Indian
dessert made during festivals and special occasion. The combination of thick
condensed milk, rice and sugar brings great aroma and taste.
You will need
One cup Long Grain Rice – Basmati Rice
Milk Half litre
Sugar as per taste
Generous pinch of Saffron strands
One spoon cardamom powder
How to prepare Paal Payasa or Rice Kheer
Wash basmati rice under clean running water and soak it in
warm water for one hour. In a cup of hot milk add saffron and keep it aside.
Heat milk in a thick bottomed vessel. When the milk boils,
lower the flame and continue boiling.
Now add the soaked basmati rice to the boiling milk.
When the rice softens (which means it has been cooked) the
milk would have thickened.
Add sugar, cardamom powder and milk in which saffron was
soaked.
Cool the pudding and serve.
