Simple Fried Rice Recipe - Indian Style

We Indians, or rather Asians can never get separated from
rice. Rice being the staple food for us, we have variety of rice recipe to be
tried.
The easiest factor is rice recipes are suitable to be
included during any time of day and also for dinner. Easy filler and kills
hunger instantly.
Rice recipe can also be a great lunch box option.
Today, let us talk about making the easiest rice recipe,
Fried Rice. The aroma of sizzling vinegar and soya sauce fills in every corner
of the kitchen.
Ingredients needed
1 cup of basmati rice
3 spoon vinegar
2 spoon soya sauce
Half bowl chopped spring onions (If you cant find spring onions then use the common ones)
Finley chopped garlic
Bay leaves
1 spoon jeera
¾ th cup finely chopped vegetable
A fist full of cashew nut
Oil
Salt as per taste
Recipe:
Soak basmati rice in warm water for about an hour.
Boil the rice in water. When done, drain the extra water and
keep aside for cooling. It is better to spread the boiled rice in a wide plate
and allow for cooling.
Mean while, chop all the vegetables finely. Since there is
no pressure boiling of vegetables involves, chopping into very tiny pieces is a
must. When you fry them in the oil, vegetables will lose their rawness yet
remain crunchy along with the rice. This is what makes the fried rice unique.
Also chop onion and garlic.
Now take a wide thick bottom pan. Pour about 4 spoons of
cooking oil.
Once hot, add bay leaves, cumin seeds and cashews to the
pan. Sauté for a minute.
Then add garlic pieces, followed by chopped onion. Fry on
high flame, also ensure nothing gets burnt down.
Now add the vegetable little by little and keep frying.
At this point, add vinegar and then soya sauce.
Mix well while allowing frying for a couple more minutes.
Add salt and stir well.
Now add the cooked rice and stir gently. Add freshly ground
pepper if needed.
Serve with tomato ketchup or any munchurian gravy dish.
Some tips to be noted:
- Also you can add a small amount of sugar while frying the vegetable as it help in retaining the natural color of the vegetables.
- High flame is important as it helps to evaporate the water from the vegetables quickly. Else ingredients in the pan might turn mushy. So use thick bottom pan.
- You might also include ajinomoto in this recipe if needed.
- Use long grain rice especially Basmati Rice as the aroma plays a very important role in making a perfect Fried Rice.
