Make at Home Sun Dried Mango Pulp Treat - Aam Paapad | Maambala (Tulu Name)
Summer in India is exclusively a season for mangoes and jackfruits. It is during the hot summer days, many travel back to their natives as the season is usually holiday season. The schools are shut and the vacation mode is full on across the country.

Today we show a quick glimpse of how aam papads are made. Aam papads are basically sundried mango pulp. They are soft, juicy and taste great when relished during rainy season. It simply gives you a great company during boring days of rainy season.
In Udupi, prevailing local language is TULU. And the local Tulu name for Aam Papad is Maambala.

Sun drying is the major task behind the recipe of Aam Papad.
The steps involved in preparing Sun dried Mango Pulp Bars are explained in simple words with step-by-step images of the process.
Collect few fully ripe mangoes. Peel and make slices of the pulp.
Blend in mixer into smooth paste. Add jaggery or sugar if needed while blending the pulp.
Add powdered black pepper and salt. Mix well.
Pour the blended pulp onto a wide flat surface. It can be a plastic sheet or a laminated board.
Spread into a thin uniform layer of even thickness.
Allow the setting to dry under sun. Sun drying is a lengthy phase in the process of making aam papad.
It will take at least 7 days for the pulp to be free of moisture content.
Dried mango pulp layer is easy to peel off from the surface where it is was allowed for drying.
Once fully prepared, cut the sun dried pulp into small pieces and store in air tight containers. No refrigeration is needed. No preservatives included here.
These tasty mango bars have a great shelf life. It stays good for several months and are a popular treat during off-season of mangoes.
