Puri Basundi; the taste of India
The tastes of Indian recipes are beyond imagination. There
are countless Indian sweets and the dessert recipes are mostly usually easy to
follow.
Today one such famous dessert recipe I am sharing is recipe
of basundi. Basundi is one of those Indian sweets that is usually prepared
during festivals or any other important occasions that is to be celebrated with
great pomp.
Basundi is a dessert made of milk. It is more appropriately
defined as thick condensed sweetened milk with dry fruits, cardamom, cloves and
saffron add-ons. Isn’t it simple. :-)
Now break down the definition into the recipe. This is even simpler. :-)
Ingredients:
- Half liter milk (will serve 2 adults)
- 2 cups of sugar
- 3 spoon of Cardamom powder
- Cloves, raisins, cashew pieces, and almond pieces.
- Half a spoon of ghee to fry all the dry fruits.
Dessert Recipe:
- In a thick wide pan, pour milk and boil over low flame.
- Keep stirring at short intervals while continuing to boil.
- The milk will begin to thicken and stick to the walls of the pan. Scrap the vessel and add the thickened milk back to the boiling milk.
The whole process of condensing and reducing the milk quantity takes some time and patience too. :-).
Believe me; your patience will be well rewarded with the taste of Basundi. :-).
- When the milk is reduced to half, add sugar and boil further.
- Meanwhile, add cloves and cardamom powder.
- When the milk has attained the desired thickness turn off the flame, and add fry raisins, cashews and almonds in ghee and add it to the thickened milk.
- You can also top it with saffron.
The aroma and taste of Basundi is in-explainable.
Basundi can be served alone as a chilled dessert. Or it can also
be served hot with Puri or Chapathi.
Puri-Basundi is one combination that you will
never want to miss. I just had this today.
