Coconut Rice for your lunch:
I know this coconut rice is quite familiar to all, but you
have many other ways to prepare Coconut rice. Either you simply mix up rice
with coconut grates or sauté coconut with oil then mix with rice. One more
method is to boil with coconut milk. This is the way I prepare coconut rice.
Whatever I do, I love to share it with all happy ladies. I
prepared this for my lunch time today :)
Mind it, this recipe contains mega calories and people who
are on diet may have to avoid this tasty rice.
All you requite is :
- One coconut
- 1 cup rice
- Jeera, 2 sticks of cinnamon
- One spoon ghee
- Cahews and raisins.
Procedure:
- Wash rice with clean water and soak in water for about half an hour.
- Extract one cup coconut milk from grated coconut by adding water and grinding it. See to that the coconut milk be concentrated.
- Take a cooker pan and fry cashews, raisins, jeera and cinnamon by adding one spoon ghee until golden brown.
- Do not add more quantity of ghee because the coconut milk also produces too much oil.
- Now add rice and fry for about 5 to 10 minutes. Stir them well with a spoon so that it does not stick to the base.
- Now add one cup coconut milk and one cup water to cooker. Suppose the quality of rice requires more water, simply add half cup water extra.
- Keep in high flame till one whistle and simmer for about 10 minutes, similar way like you cook rice.
Serve hot with salad at your lunch time.
