Carrot/Gajar Halwa Recipe With Almond Milk

India is very well known for festivals followed by festive recipes. Halwa/sweet recipes are popular and prepared in different ways in different regions. A single dessert recipe is cooked with many flavors each one tasting really new. Carrot/gajar halwa is one such recipe. It does not include any complex steps and can be prepared with either milk or khova or almonds. Fresh carrots are grown all season and so is the best festive recipe. So simple and quickest recipe specially for beginners.

Lets get started. I have picked almond milk for halwa recipe, this gives a rich creamy texture.

Carrot Halwa

Ingredients:

Fresh carrots (8 to 10 )

Sugar (2 cups )

Ghee (1/4 cup)

Almonds (15 to 20 )

Procedure:

  • Soak 15 to 20 almonds in a clean bowl (30 mins)
  • Clean wash fresh carrots (8 to 10). Let them not be discolored and soft. Grate them finely. 
  • In a deep pan, fry cashews with ghee till they are golden brown.
  • Add the carrot grates and sauté them for 10 mins till you find the color difference. Add ghee (half cup) in intervals.
  • Blend soaked almonds with little water to a smooth paste.
  • Now add sugar (2 cups) and water (2 cups) to the pan and cook well. Keep stirring the pan to avoid burning. You can add more sugar as per your taste. But keep in mind fresh carrots themselves are sweet. 
  • Sugar dissolves and thickens. 
  • Once they are cooked well (around 15 mins ), pour almond milk and stir continuously. 
  • Mix well to form the halwa texture. Also ghee releases when the perfect texture is formed.
  • Carrot/Gajar Halwa/Dessert is ready to serve.
  • You can flavor with cardamom powder and dry fruits powder and the turning off the flame.
  • Enjoy the bright colored delicious sweet !
