Green Gram and Baby Spinach Dish
Spinach is a widely accepted healthy edible leaf. Today I am
sharing a recipe which involves baby spinach leaves and green gram as its main
ingredients.
Ingredients:
- Half cup green gram
- Half cup split green gram (without cover)
- One lemon sized tamarind.
- Baby spinach leaves.
- Asafoetida.
- 4-5 garlic pods.
- Salt (as per taste)
- For seasoning: oil, cumin, mustard and turmeric.
Procedure:
Boil green gram (both the variety) with some water in a
thick wide pot.
Mean while, chop baby spinach leaves and fry with some oil
in a pan.
Once fried, hand mash them as much as possible.
Once the green gram is boiled, add the fried and mashed
spinach leaves and continue cooking over low flame. Add asafoetida too at this
stage.
Soak tamarind in warm water for 10 minutes and then squeeze
to extract the tamarind juice. Put the tamarind juice over flame. When it
boils, add the sizzling hot tamarind juice to the pot/vessel in which green
gram and spinach are being cooked. Continue for another 5 minutes over low
flame.
Add salt and mix well.
For seasoning, heat 2 spoon of oil in a pan. Once the oil
heats up, add mustard seeds, coriander seeds, a pinch of turmeric, and garlic
pieces. Fry and then add.
Serve with hot steaming rice.
The tamarind and garlic duo combination delivers an unique
taste to the whole preparation.
